Sweet potato pancake recipe
Nutritious and delicious!
Delicious, wholesome and sustaining, what else can you ask from a simple pancake that takes just a scant few minutes to knock up? If you’ve already tried our zucchini pancake recipe then you’ll love this variation. Sweet potatoes offer a more substantial feeling to this recipe and one of these pancakes is a great quick meal all by itself. Serve it with some Mackerel or Bacon with a little side-salad and you’re in for a real treat!
Ingredients:

1 whole sweet potato.
2 large eggs.
4 tablespoons of spelt flour.
Seasoning to taste
(try chilli, pepper, salt or cinnamon
for a sweeter spin. It’s all so good!).
Butter or Coconut oil.
Method:
Place the flour into a bowl and add in the eggs. Beat together until you have a smooth creamy mixture and season to your taste. Next grate the sweet potato* (you can leave the skin on, it’s got lots of yummy nutrients in it) with a course grater. Add it all to the bowl of batter and mix it in thoroughly.
Take your small skillet and melt a good knob of butter over a medium heat. When the butter is sizzling spoon out the mixture into the skillet and shape into 6” diameter pancakes roughly 1/4” thick. Fry on a medium heat for 3 to 4 minutes until golden brown before flipping and frying for another 3 to 4 minutes. Serve and enjoy!
*Word of warning at this stage; sweet potato is pretty firm and will spring all over the place if you attack it with the grater too vigorously. Take a steadier action to avoid finding slivers of sweet potato all over the kitchen for the next few days!
